Tutti Frutti - from watermelon rinds

I already have another post in how to make tutti frutti from raw papaya. This post is trying the same recipe from watermelon rinds. So now when you guys a watermelon you can make use of the fruit 100%.
Tutti Frutti is widely used in India as a flavoring to ice cream, or you can make cakes and cookies with them as well. 
You can add any food color to the them to make them more colorful, I had only the red and orange when I was making these.


Ingredients Required:
Rind of watermelon, peel the green part and cube the white part into small pieces - 2 cups
Sugar - 1.5 cup
Rose essence - 1 tblsp
Food color as required.

How to make?
  • Boil water in a large pan and add the cubes of the watermelon rind.
  • Boil for 5-8 minutes till it becomes translucent.
  • Strain and set aside.
  • In the same pan add the sugar, 1 cup water and rose essence and boil till the sugar dissolves.
  • Add the cooked rinds and allow to boil for 10 minutes so the syrup thickens and is absorbed.
  • Strain this into separate bowls (as many colors)
  • Add couple of drops of the food color in each bowl and give a good mix.
  • Spread each color on a plate and allow to dry in the sun for a day.
  • Store in air tight container.
