Almond Tea Cake

This is a mildly sweet cake and makes a perfect accompaniment for tea or coffee. Even makes a great breakfast slice as it loaded with almonds.

I like to use mini aluminum pans for take away and makes great gifts as well.

Makes 1 loaf tin
Ingredients Required:
Sugar - 3/4 cup
Melted butter - 1/4 cup
Almond flour - 1/2 cup
All purpose flour - 1 cup
Baking powder - 2 tsp
Vanilla essence - 1 tsp
Milk - 1 cup
Slivered almonds - 1/4 cup + 2 tblsp

How to make:
Grease and dust a loaf tin and keep aside.
Pre heat the oven to 350.
In a mixing bowl, add the sugar and butter and beat well till the sugar us melted and incorporated with the butter.
Add the milk and vanilla essence and mix well.
Sieve in the all purpose flour and baking powder.
Add the almond flour and 1/4 cup of the slivered almonds.
Mix well till no lumps are there but do not over mix.
Pour in the greased pan and garnish with the remaining slivered almonds.
Gently press them in the batter.
Bake for 45-50 minutes till an inserted toothpick comes out clean.
Cool, slice and enjoy!

Notes:
Make it vegan by substituting butter with oil and milk with almond milk.
