Tutti Frutti - from watermelon rinds

I already have another post in how to make tutti frutti from raw papaya. This post is trying the same recipe from watermelon rinds. So now when you guys a watermelon you can make use of the fruit 100%. Tutti Frutti is widely used in India as a flavoring to ice cream, or you can make cakes and cookies with them as well. You can add any food color to the them to make them more colorful, I had only the red and orange when I was making these. Ingredients Required: Rind of watermelon, peel the green part and cube the white part into small pieces - 2 cups Sugar - 1.5 cup Rose essence - 1 tblsp Food color as required. How to make? Boil water in a large pan and add the cubes of the watermelon rind. Boil for 5-8 minutes till it becomes translucent. Strain and set aside. Honey Roasted Nuts

I am a big fan of honey roasted nuts and many times end up buy a bug box from Costco. But once I tried this recipe, I am sure I will never buy them again. The process is super simple and fairly fast enough. You can store them and munch on them as you like and best of all you can add nuts to your liking. Ingredients Required: Assorted Nuts - 1 cup ( I used a mix of almonds, cashews and pecans) Honey - 2 tblsp Sugar - 1.5 tblsp Salt - pinch Water - 1.5 tblsp Butter - 2 tsp How to make: In a bowl mix the sugar and salt. Set aside. In another bowl add water, honey and whisk well till it mixes well. In a pan, dry roast the nuts on low-medium heat for 5 minutes till the nuts are well toasted. Remove the nuts. In the same pan, add the butter and allow to melt and then add the honey mixture and bring to a boil. Add the nuts and toss to coat them well. Almond Tea Cake

This is a mildly sweet cake and makes a perfect accompaniment for tea or coffee. Even makes a great breakfast slice as it loaded with almonds. I like to use mini aluminum pans for take away and makes great gifts as well. Makes 1 loaf tin Ingredients Required: Sugar - 3/4 cup Melted butter - 1/4 cup Almond flour - 1/2 cup All purpose flour - 1 cup Baking powder - 2 tsp Vanilla essence - 1 tsp Milk - 1 cup Slivered almonds - 1/4 cup + 2 tblsp How to make: Grease and dust a loaf tin and keep aside. Pre heat the oven to 350. In a mixing bowl, add the sugar and butter and beat well till the sugar us melted and incorporated with the butter. Add the milk and vanilla essence and mix well. Sieve in the all purpose flour and baking powder. Add the almond flour and 1/4 cup of the slivered almonds. Mix well till no lumps are there but do not over mix.
