I am a big fan of honey roasted nuts and many times end up buy a bug box from Costco. But once I tried this recipe, I am sure I will never buy them again. The process is super simple and fairly fast enough. You can store them and munch on them as you like and best of all you can add nuts to your liking.
Ingredients Required:
Assorted Nuts - 1 cup
( I used a mix of almonds, cashews and pecans)
Honey - 2 tblsp
Sugar - 1.5 tblsp
Salt - pinch
Water - 1.5 tblsp
Butter - 2 tsp
How to make:
In a bowl mix the sugar and salt. Set aside.
In another bowl add water, honey and whisk well till it mixes well.
In a pan, dry roast the nuts on low-medium heat for 5 minutes till the nuts are well toasted.
Remove the nuts.
In the same pan, add the butter and allow to melt and then add the honey mixture and bring to a boil.
Add the nuts and toss to coat them well.
Once the mix thickens, remove from the pan and set aside in a large bowl.
Add the sugar salt mix and toss well.
Spread on a silicon mat and allow to cool down for an hour.
