Almond Oat Cookies - Eggless

I just baked a fresh batch of these cookies and they taste delicious. And the best part of it is that these cookies are so healthy and easy to make. I have already tried baking Oats Cookies with whole oats, but this is a different version with powdered oats and I guess this is more healthier as I used very little flour and butter.
These go great with your evening Tea or Coffee. I found couple of these recipes in various websites and modified them a bit and came up with this!


Makes 20 - 24 cookies
Ingredients Required:
Rolled Oats - 1 cup
All purpose flour - 1/4 cup
Sugar - 1/4 cup
Almonds - 1/4 cup
Salt - pinch
Baking powder - 1/2 tsp
Vanilla essence - 1/2 tsp
Almond Essence - 1/2 tsp
Butter - 1 tbsp
Milk - 1/4 cup

How to make?
Grind the oats into powder and set aside.
Grind the almonds to powder and set aside.
Mix all the dry ingredients together.
Add the vanilla essence, and almond essence and give a good mix
Fold in the butter at room temperature and slowly add the milk and knead into a dough of correct consistency.
Cover this dough in plastic wrap and refrigerate for 2 hours.
Preheat the oven to 300 F.
Place a parchment paper on a cookie tray.
Roll out small balls (slightly bigger than marble) and gently flatten them, place them on the cookie tray.
If you want, you can give slight impressions on the cookies by gently pressing them with a fork.
Leave 2 inches gap between each cookie. Bake them for 10 - 15 minutes till they turn light golden in color.
Remove from the oven and allow to cool on a cooling tray for 10 minutes.
Enjoy them with a hot cup of tea!
