Almond Vanilla Biscotti | Eggless

Biscotti! Just love the pronunciation of this delicious word :) I have been wanting to try out a basic simple Biscotti recipe for a very very long time and at last did it today. I should have tried this delicious and easy recipe earlier. It is just so so so delicious. I have no words to say, you guys just have to try this out! I saw a couple of recipes, and videos. All of them were using egg, so I just skipped the egg and added milk instead. Well it came out as delicious with no difference at all!


Makes 20 Biscottis
Ingredients Required:
Flour - 1 cup
Rolled oats - 1/2 cup
Sugar - 1/2 cup
Baking powder - 1tsp
Baking Soda - 1 tsp
Almonds - 1/2 cup
Milk - 1/4 cup
Oil - 2 tblspn
Vanilla - 1 tblspn

How to make it?
Take a large mixing bowl, add the dry ingredients - flour, oats, sugar, baking powder, baking soda and mix well.
If you have sliced almonds, you can use that directly. But I had only whole almonds, so I roughly chopped them in a blender and added that.
Add the oil, vanilla and crumble the flour so it mixes well.
Now slowly add the milk, and knead into a loose soft dough. You can add more or less dough based on the consistency of your dough. It should be slightly looser than a chappathi dough.
Preheat the oven to 350 F. Line a parchment paper on a cookie sheet and set aside.
Flour a flat surface to work on your dough. Knead the dough on the floured surface and divide into two parts.
Gently shape into a shape of a log, place it on the cookie sheet and press it down gently with your fingers so it in only about 3/4th inch thick.

Do the same for the other portion of the dough.
Bake for 25 minutes.


Remove from the oven, cool for 10 minutes.

Take a sharp knife and slice it diagonally into 1 inch pieces, so roughly you would get around 10 pieces from each log.

Arrange the biscotti's cut side down on the baking sheet and bake for another 8 minutes at 350 F.

Flip the sides of the biscotti and bake for another 10 minutes.

Now your delicious Biscotti's are done! But it has to be cooled for 20 minutes before popping them in your mouth :(
Only when it cools down completely, it would become crispier.
These goes wonderful with a hot cup of tea!



Notes:
If you do not have oats, you can add flour instead of it.
You can add nuts/dried fruits of your choice.
