Paratha is an Indian flat bread which means layers of cooked flour. Parathas are usually stuffed with vegetables such as boiled potatoes, radishes, cauliflower, paneer or even dhal.

Makes 6
 Ingredients Required:
Wheat flour - 2 Cups
Salt as required
Water

For the filling:
Medium sized potato - 2
Paratha Masala - 2 tsp
Ginger paste/powder - 1 tsp
Coriander Powder - 1 tsp
Dry mango powder - 1 tsp
Salt - 1/2 tsp
Turmeric powder - 1 tsp
Chilli powder - 1 tsp
Chopped Cilantro

How to make?
Mix the wheat flour with salt. Mix required amount of water and knead to proper consistency as we do for chappathis.
Boil the potatoes and peel. Mash them along with all the spices and mix with chopped cilantro.
Garam Masala can also be used with paratha masala is not available.

Divide the wheat flour into 6 equal balls and divide the aloo filling into balls of equal size of the flour balls.

With a rolling pin, roll the flour into small circles and place the aloo filling in the middle.

Cover the aloo filling on all sides.

Place this aside for few minutes.

Now roll the balls as we make chappathis, make sure the folded side is on the top while rolling it out else the filling would come out.

Heat the pan, and place the rolled out paratha on the pan. Heat on medium flame. Heat eash side for about 2 minutes and then turn the paratha and apply oil on each side and again heat for a minute, till light brown spots appear on both the sides.

Remove from the pan.

The parathas can be served as a single piece or cut into 4 pieces.

Parathas taste best with plain curd or raita.
