Baby Potato Roast

We were grocery shopping the other day and saw the baby potatoes on the shelf. What comes to your mind on seeing these? Yup! Baby Potato Roast :) I made these for lunch on Sunday and believe me the plate was empty in the blink of an eye ;)

This makes a perfect side dish for any South Indian meals and also can be picked with toothpicks and served as an appetizer.

Serves 2
Ingredients Required:
Baby Potatoes - 15 -20
Chilli powder - 2 tsp
Turmeric powder - 1 tsp
Coriander Powder - 2 tsp
Salt to taste
Oil

How to make?
Pressure cook the baby potatoes for one whistle. Not more than that else the potatoes would be overcooked.
Peel them carefully and set aside.
In a cup, add 1 tblspn of oil and all the masala powder along with salt and mix well.
Coat each potato with this masala paste and allow to marinate for 10 minutes.
Heat oil in a flat pan, when the oil is hot place each potato on the pan, such that all the potatoes are touching the bottom of the pan.
Close the pan and cook on low-medium heat.
Every couple of minutes open the pan and turn the side of the potato till all the sides become golden in color.
Serve hot and enjoy :)
