Badam | Almond Burfi | Gluten Free



Makes 20



Ingredients Required:
Badam - 1 cup
Milk - 2 tblsp
Sugar - 1 1/4 cup
Ghee - 1/2 cup

How to make?
Soak the badam in water overnight.
Peel the skin and set aside.
Grease a tray with ghee on which the cake is going to be poured. 8 X 8 tray would be good for this amount.
Grind the badam with milk into a very smooth paste.
In a large heavy bottom pan, add a little ghee and add the badam paste.
Saute for 2 minutes then add the sugar.
The consistency would become loose as the sugar would have melted.
Slowly add ghee from time to time. so the mixture does not stick to the sides.
Stir continuously till the mixture thickens and comes together. It would take about 20 minutes to 30 minutes to achieve this consistency.
Pour the cake onto the tray and gently pat the tray down, until the cake is evenly spread.
Allow to cool for 20 minutes and slice into desired shape.

Notes:
You have to pour in the correct consistency, if poured too early then it would be like halwa, if late then the cake would be too hard.
You can reduce the ghee and use a mixture of oil and ghee.
If you have poured too early and the cake does not set upon cooling, again heat the pan and pour back into the pan. Stir for few more minutes and pour back into the tray.
