Makes 12
Ingredients Required:
Ripe Banana - 3
Rice Flour - 1/2 cup
Maida - 1/4 Cup
Chopped badam - 5
Chopped cashews - 5
Raisins - 10, cut into halves
Jaggery - 1/4 cup
Cardamon - 1/2 tsp
Salt - very small pinch
Water as needed
Ghee - few tsp for frying
How to make?
Take a large mixing bowl and mash the banana with the back of a fork, till there are no big lumps.
Add in all the other ingredients and mix well.
Add water so that the consistency is thicker than that of idly batter.
Heat a pan on medium heat.
Pour out a small ladle of batter and spread gently. The dosa should be thick and small (palm sized).
You can pour around 3 dosa at a time on a regular sized dosa pan.
Drizzle some ghee on the sides so they get cooked.
Cook on low - medium heat, so the dosa does not burn.
After few minutes, flip the dosa to cook the other side. Both the sides should be cooked till golden brown.
Remove from the pan and serve.
This makes a great sweet appetizer or dessert!
Notes:
The addition of pinch of salt is to bring out the sweetness, and it sure did! This is optional.
Oil can be used instead of ghee, but ghee gives a good flavor.
Use really ripe bananas for best taste.
The raisins are cut in halves to avoid puffing up when frying.
