Banana Oat Muffin | Eggless

This is a hearty and healthy muffin filled with oats with the flavor of banana and makes a wholesome breakfast.

Makes around 10 big muffins
Ingredients Required:
All Purpose Flour - 1 1/2 cup
Rolled/Quick Cooking Oats - 1 cup
Salt - 1 tsp
White Sugar - 1/4 Cup  + 3 tblspn
Brown Sugar - 1/2 cup
Honey - 1 tblsp
Baking Soda - 1 tsp
Baking powder - 2 tsp
Flax Seed powder - 1 tblsp
Water - 1/4 cup
Milk - 1/2 cup
Oil - 1/3 cup
Mashed Banana - 2 (around 1 cup)
Cinnamon - 1 tsp
Raisins - handful

How to make?
In a large mixing bowl mix together the flour, oats, salt, baking soda, baking powder, cinnamon, white and brown sugar.
In another small bowl, whisk the flax seed and water till frothy. This serves as the egg substitute. If you are planning to use egg, skip this step and use 1 egg.
In another bowl, mash the banana with a fork and add the oil, and milk. Combine the flax seed mixture with this along with honey. Mix the wet ingredients till well combined.
Make a well in the dry ingredients and pour in the wet mixture and whisk the batter.
Finally add in few raisins and give a final mix.
Preheat the oven to 400 F.
Line the muffin tray or spray with oil.
Fill in the muffin tray till 3/4th full.
Bake in the preheated oven for 20 minutes. Insert a toothpick to check whether it is well done.
Cool for 10 minutes and serve warm.

Notes:
The original recipe called for an egg. I replaced the egg with Flax seed powder dissolved in water.
Other nuts and spices can be added according to ones taste.
