Bhel Puri Chaat | Vegan | Gluten Free



This is a famous street food chaat in India. Also my favorite! and very easy to make... just throw in all the ingredients in a large mixing bowl, give a good toss! and you are ready to eat. It involves no cooking!
It makes a good party dish also.

Ingredients Required:
Puffed Rice - 3 cups
Sev - 1/2 cup
Papdi - 10, roughly broken

Onion - 1/2 cup, finely chopped
Tomato - 1/2 cup, finely chopped
Grated Carrot - 1/2 cup
Cucumber - 1/2 cup, finely chopped
Corn Kernals - 1/2 cup
Boiled Potato - 2, roughly mashed
Mango - 1/2, finely chopped
Cilantro - chopped
Lemon Juice - 2 tblsp (or as needed)

Salt - to taste
Chat Masala - to taste

Green Chutney:
Blend an handful of mint, cilantro, 1 inch piece ginger, 2 green chillies, salt to taste, 1 tsp of sugar in a blender. Grind till a smooth paste and add water if required. The consistency should be little thin and watery. Squeeze in juice from 1/2 a lemon and serve.

Sweet Chaat Chutney:
Tamrind - Lemon Sized
Dates - 4, pitted
Jaggery - 1/4 cup
Chaat Masala Powder - 2 tblspn
Microwave the tamrind with 3/4 cup of water for two minutes.
Puree the tamrind and extract the water.
Blend the pitted dates along with the tamrind water in a blender.
Heat this mixture on low flame.
Add the jaggery and allow to dissolve.
Add the chaat masala powder and salt.
Boil this mixture on medium heat for 20 minutes till the mixture thickens to a saucy consistency.


 
How to make?
Take a large mixing bowl, add in all the vegetables and give a good mix.
Mix in the salt, chaat masala, green chutney, sweet chaat chutney and toss.
Finely add in the puffed rice, and papdi.
Plate it and garnish with sev, cilantro and drizzle the chutney on top.

Notes:
This is just the basic Bhel Puri Recipe. You can add/omit any ingredient as per your liking.
I have also tried with roasted/boiled peanuts, Sprouted Green Moong Dhal, Boiled Channa etc.
Onion is optional.
For serving in a party, add in all the dry ingredients and keep the chutneys by the side so it would not be soggy.
Sweet chaat chutney can be made in advance and refrigerated.
