Bhindi Masala | Okra | Ladies Finger in Spiced Gravy | Vegan | Gluten Free

This is one favorite recipe for me and my Hubby. It goes well with roti/chappathi and even with rice. But we usually have it with Chappathi for dinner. It is easy to make and is healthy too. There are many variations of making this dish and this is one of them. Few also make it by stuffing the Bindi with spices, that is going to be my next try.

Ingredients Required:
Okra/Bindi/Ladies Finger - 12- 14, cut diagonally into 2 inch pieces
Onion - 1, finely chopped
Tomato - 1, finely chopped
Ginger Garlic Paste - 1 tsp
Salt as needed
Coriander Powder - 1 tsp
Turmeric Powder - 1 tsp
Cumin Powder - 1 tsp
Red Chilli Powder - 1 tsp
Garam Masala - 1 tsp
Amchoor/Dry Mango Powder - 1/2 tsp
Dry Methi Leaves - 1 tsp (Optional)
Cilantro for garnishing
Oil as needed
 
How to make?
Sprinkle some salt on the cut ladies finger and mix well.
Traditionally the ladies finger is deep fried, but I did not want to do that. So I just used a tblspn of oil in a flat pan, coated the surface and tossed the ladies finger till brown in color. We can also use cooking oil spray on top. Set aside.
Another method is to arrange the cut ladies finger in a baking sheet spray some cooking oil and bake at 350 F for 10 - 15 minutes until brown.
In another pan, heat some oil and add cumin seeds when hot. Add the chopped onions and the ginger garlic paste. Fry till the onions are brown in color and add the tomatoes. 
Add in all the masala powder, add 1/8th cup of water if required and mix well.
Close the pan and allow to cook for 15 minutes on low medium heat the tomatoes are cooked and the oil oozes out.
Sprinkle some salt and dry methi leaves and mix well.
Add the fried ladies finger just before serving, toss once, garnish with chopped cilantro and serve with roti of your choice.
