Brownies | Eggless

Now who does not like brownies?? I am sure that it would be on the favorite food list for all! I am such a big fan of brownies, but always eat them with a guilt as they are loaded with calories. Well, I finally decided to bake a batch of low fat brownies at home, so I can have it guilt free :) And as usual these brownies are egg-less as my other baking recipes.
This recipe is sure is a keeper and very easy to make.

Makes - 16 pieces (One 8 inch square pan)
Ingredients Required:
All Purpose Flour - 3/4 cup
Cocoa Powder - 1/4 cup
Sugar - 1 cup
Oil - 1 /4 cup
Curd - 1/2 cup
Milk - 2 tblspn
Vanilla Essence - 1 tsp
Baking Powder - 1/2 tsp
Salt - pinch
Walnuts/any other nuts - handful (Optional)

How to make?
Preheat the oven to 350 F.
Take a mixing bowl and add the dry ingredients - flour, cocoa, salt, baking powder and mix well.
In another mixing bowl add the wet ingredients - oil, curd, milk, vanilla essence and sugar. Mix well so the sugar is well dissolved.
Add the wet and dry ingredients together and whisk well with a spatula. Add the chopped walnuts and give a quick fold.
The batter will be very thick.
Grease and flour the baking pan and pour in the batter and spread evenly.
Bake in the preheated oven for 30 minutes or until done.
A crust should be formed on the top and a inserted toothpick should come out clean.
The brownie would not raise much and would be thin and fudgy.
Cool down the tray for 10 minutes and slice into squares.


Notes:
1. Since I used Baking Powder, they have raised a bit and are slightly fluffy. If you like fudgy brownies, do not use the Baking Powder.
2. I forgot to spray the Aluminium Foil Base with oil, hence as you can see in the pictures, they have slightly stuck (but I had a wonderful time scrapping and eating from the base :) ). So do not forget to spray your baking base with oil.
3. The sugar was just correct, if you have a sweet tooth, do increase it.
