Brownies | Vegan | Brownie Mix

I usually stock a box of cake or brownie mix for the rainy days. I had one box of Duncan Hines brownie mix lying around for a long time.  Usually the store bought mix calls for eggs, and I use milk or yogurt as a substitute for eggs. I just wanted to try a Vegan version and used flax seeds and they came out equally delicious.

Makes 16 squares
Ingredients Required:
Duncan Hines Family Pack - 1 (19.9 Oz)
Oil - 1/2 cup
Water - 1/4 cup
Egg Substitute: (for 2 eggs)
Flax Seed Meal - 2 tblspn
Water - 6 tblspn

How to make:
Empty the mix into a large mixing bowl.
Add in 1/4 cup water and oil.
In a small bowl, add 2 tblspn flax seed meal and 6 tblspn water. Mix well with a fork till frothy. Add this to the brownie mixture.
Mix the batter well till well incorporated.
Pour in a baking pan and bake for around 30 minutes.
The brownie is done when the sides leaves the edges and a toothpick inserted comes out clean.
Let it cool for 20 minutes and serve.
This goes well with a scoop of vanilla ice cream or a drizzle of chocolate syrup!Yummy!

Notes:
The mix called for 3/4 cup of oil. But I used only 1/2 cup.
The packet said, for fudgy brownies use 2 eggs and for cake like brownies use 3 eggs. I used only egg substitute for 2 eggs.
Flax seed meal - Take flax seed and grind it till powdery.
You can add walnuts or any other nuts of your choice. Also you can add chocolate chips for double chocolate brownies!
Substitute for 1 egg:
1 tblspn flax seed meal mixed with 3 tblspn of water
