Grated Carrot - 4 cups
Sugar - 1 cup
Ghee - 2 tblspn
Cardamon - 1 tsp
Chopped Nuts - 1/4 cup
Milk - 2 cups
How to make?
Add the ghee in a flat wide pan and heat on medium. Add the chopped nuts and fry till golden brown. Remove from the pan and set aside.
To the same pan, add the grated carrot and fry for few minutes in medium low heat.
Add the milk to the pan. Keep on stirring on low-medium heat till all the milk gets absorbed to the carrots. After 20 minutes of cooking the milk would have reduced in quantity. Add the sugar, cardamon. Continue cooking till all the milk evaporates and the mixture thickens.
This would take another 20 - 30 minutes.
Remove from heat, garnish with nuts and serve.
