Coconut Almond Cookies - Vegan and Gluten Free

These are absolutely delicious melt in the mouth cookies - cannot stop with just one. If you are a coconut lover - then you better try these.
They are simple to make with minimal ingredients. 
These use almond flour that I got from Costco, if you do not have them try substituting them with any other gluten free flour, but then they will not be Coconut Almond Cookies :)
Also I have used unsweetened coconut chips, and I have found them in Costco and Trader Joes. You can use coconut flour as well, but I prefer the chips ground to a coarse powder just for the texture.



Makes 20
Ingredients Required:
Unsweetened Coconut Chips, coarsely ground - 1.5 cup
Almond Flour - 1.5 cups
Coconut Oil - 1/3 cup
Sugar - 1/2 cup
Almond Milk - 2 tblsp
Vanilla - 2 tsp
Baking Soda - 1/2 tsp
Baking Powder - 1/2 tsp

How to make:
  • In a large mixing bowl, add all the ingredients except the almond milk and mix till 
  • Add in the alomond milk as required to for a well combined dough
  • Refrigerate for 30 minutes
  • Pre heat the oven to 350
  • Line a baking tray with parchment paper
  • Scoop out a tblsp on cookie dough, make a ball and gently flatten it
  • Place the dough with an inch gap between them as they expand on baking
  • Bake for 12-15 minutes till you see golden brown on the corners
  • Cool for 10 minutes
  • Store in air tight container after cooling

Notes:
  • I have used the Almond Flour from Costco
  • I have used unsweetened coconut chips which can be got in Costco or Trader Joes
  • I have used Organic Coconut Virgin oil from Costco
  • You can play around with the proportion of coconut to almond flour
