Cherry Cake - Eggless


Makes one 8" pan
Ingredients Required:
All purpose flour - 1 cup
Sugar - 2/3 cup + 1 tblsp
Baking powder - 1 tsp
Baking Soda - 1 tsp
Vanilla essence - 1 tsp (optional)

Curd - 1/2 cup
Milk - 1/4 cup + 2 tblsp
Oil - 1/8 cup
Cherry - 10, pitted and chopped

How to bake?
Mix the flour, baking powder and baking soda in a mixing bowl and keep aside.
Mix the sugar, milk, curd, oil and the vanilla essence in another mixing bowl and give a good whisk so everything blends together.
Add this mixture to the flour mixture and give a nice mix.
Fold in the pitted chopped cherries.

Preheat the oven to 350 F.
Butter and dust with flour the cake pan.

Bake for 25 minutes. Prick with a fork to see if the cake is done.
Cool for 10 minutes.
Slice and serve!
