Chocolate Cherry Cake - Whole Wheat | Vegan

Chocolate & Cherries together - Yum! I had a bottle of Maraschino Cherries, juicy, big and wanting to be used. I adapted this recipe from my Vegan Chocolate Cake recipe. If you are lover of Black Forest Cake, then you are sure to love this one. It can be compared to the Black Forest Cake as it is chocolate and has cherries, but no whipped cream. So this can be considered as an healthier version? :) You can very well use this recipe for the cake base if you are attempting to bake a Black Forest Cake.
This can be baked in a cake pan and then sliced, or you can bake it in cupcake slots for easier individual servings. You can also beautify it with a dollop of whipped cream. I just opted with powdered sugar topping.


Makes 1 8X8 pan
Ingredients Required:
Whole Wheat Flour - 1/2 cup
All Purpose Flour - 1/2 cup
Corn Flour - 1/4 cup
Cocoa Powder - 1/4 cup
Chocolate Chips - 3 tblsp ( See Notes)
Instant Coffee Powder- 1 tblsp
Sugar - 1 cup
Salt - 1/2 tsp
Baking Soda - 1 tsp
Vegetable Oil - 1/3 cup
Warm Water - 3/4 cup
Vinegar - 1 tsp
Vanilla Essence - 1 tsp
Liquid in the Maraschino Cherries - 1/4 cup + 3 tblsp
Maraschino Cherries - 1/2 cup, roughly chopped

How to Make?
Preheat the oven to 350. Grease a pan or line with parchment/aluminum foil.
In a large mixing bowl, add in all the dry ingredients and mix.
Add the oil, water,1/4 cup cherry juice, vinegar, sugar and vanilla essence. Mix well till incorporated.
Fold in the chocolate chips and the chopped cherries.
Pour the batter in the pan.
Bake approximately 30 minutes till done. (tooth pick inserted should come out clean)
Brush the remaining cherry juice on top of the cake with a pastry brush when it is warm. The cake would absorb the extra moisture giving it more flavor.
Serve as it is or with a side of Ice Cream/ Whipped Cream. Or dust with powdered sugar or cocoa.


Notes:
Chocolate chips usually contain milk. If trying as Vegan, make sure you use vegan chocolate chips, or you can you can substitute the chocolate chips with cocoa powder.
