I was looking to bake some yummy chocolate cookies. Since I was not convinced of any other recipe for Chocolate Cookies which I had looked up online, I just modified my own Chocolate Chip Cookies recipe, as they were a big hit with my toddler and his friends, and came up with this.
This recipe is a sure keeper in my books. Its eggless and whole wheat. Its crispy and melt in the mouth, and the best of all my son loves it :)
Makes a great holiday gift as well!
Makes - 36 - 40 cookies
Ingredients Required:
Whole Wheat Flour - 3/4 cup
All Purpose Flour - 3/4 cup
Cocoa Powder - 1/2 cup
Brown Sugar - 1/2 cup
White Sugar - 1/2 cup
Yogurt - 1/4 cup
Butter - 1/2 cup
Instant Coffee Powder - 2 tsp
Baking Soda - 1/2 tsp
Salt - 1/2 tsp
How to make?
In a large mixing bowl, beat the sugar and butter till creamy.
Add the yogurt. Mix Well.
Combine the flour, Cocoa powder, coffee powder, baking soda and salt. Stir well till incorporated.
Roll into a ball, cover with cling fling and refrigerate for 1 hour.
Preheat the oven to 350. Spoon out small balls, slightly flatten them and place on the baking sheet.
Bake for 15 minutes, cracks would start to appear. Cool for a minute on the tray and remove from the tray.
Notes:
The cookies were crispy and just a little soft in the center. You can bake for a minute extra for a crispy cookie, or 2 minutes less for a soft cookie.

Is it melted butter or softened butter at room temp that we need to cream? Also, to cream, do we use electric whisk or hand whisk is ok? Thank you!
ReplyDeleteRoom Temperature butter and easier to use an electric whisk. More hand exercise if using hand whisk :)
