Fresh Strawberry Cake - Eggless

I had two boxes of strawberries in my fridge and wanted to try out some new dish. I finally settled with the Strawberry cake with no eggs and butter! So low on calories and yummy too. And very easy to bake :)

Makes one 8" pan
Ingredients Required:
All purpose flour - 1 cup
Sugar - 2/3 cup + 1 tblsp
Baking powder - 1 tsp
Baking Soda - 1 tsp
Strawberry essence - 1 tsp (optional)
Pink Food coloring - 1/2 tsp (optional - if you want a pink cake, I did not use it)
Curd - 1/2 cup
Milk - 1/8 cup
Oil - 1/8 cup
Strawberry - 4 or 5(for the puree) + 2 (for decoration) (medium size)

How to bake?
Mix the flour, baking powder and baking soda in a mixing bowl and keep aside.
Blend the curd and the strawberry to make strawberry yogurt.
Add this in another mixing bowl along with the milk, oil and vanilla essence.
Add in the sugar and give a nice mix with the whisk till the sugar dissolves.
Add this mixture to the flour mixture and give a nice mix.
Since the color of the baked cake would be pale pink, if you want a more pinker cake, add in pink food coloring and mix well.
Preheat the oven to 350 F.
Butter and dust with flour the cake pan.
Pour the cake batter to the cake pan and decorate with slices of strawberry on top. You can even add strawberry chunks to the batter.
Bake for 25 minutes. Prick with a fork to see if the cake is done.
Cool for 10 minutes.
Slice and serve!
