Gongura Rice | Vegan | Gluten Free

This is a simple lunchbox recipe if you have the Gongura Thokku in hand! I usually have some thooku in hand for the rainy day.

Ingredients required:
Rice - 1 cup
Gongura thokku - 1/8 cup
Salt as needed

For seasoning:
Sesame oil - 1 tsp
Mustard seeds - 1/4 tsp

How to make?
Cook the rice with 3 cups of water for 3 whistles in a pressure cooker. Cool the rice on a plate so the grains do not stick together.
Gently add the gongura thooku and gently fold in the rice, mix such that all the grains are well coated but do not mush together.
add salt and give another mix.
In a pan, heat the sesame oil and add the mustard seeds, allow to splutter.
Season the rice with mustard seeds.
This goes well with papad, any type of raita. Also tastes delicious with plain yogurt as well!
