Green Apple Thokku | Pickle | Vegan | Gluten Free

I am just in love with the beautiful ceramic jar, that my friend gave to me the other day.  I made this pickle the other day just to fill this jar and click come pics.
Anyways the Green Apple pickle tastes very much similar to the Mango Thokku. If you are a mango lover and love pickles, then I am sure that this would be on your favorites' list as well! With the crazy Apple Season, I just couldn't resist myself from grabbing a bag of these Granny Smith Apples. These apples are just perfect for the pickle as they are a little tart. And they are much easier to grate when compared to grating Mangoes!




Makes 2 cups of pickle

Ingredients Required:
Green Apple/Granny Smith Apple - 8 - 10, peeled and grated
Ginger - 2 inch piece, peeled and grated
Gingelly/Seasame Oil - 1/4 cup
Turmeric Powder - 1 tblsp
Chilli Powder - 2 tblsp (or according to your taste)
Fenugreek Powder - 1/2 tsp
Mustard Seeds - 1 tsp
Red Chilli - 5
Curry Leaves - few
Salt - as per your taste

How to make?
In a large heavy bottom pan, heat 1/2 of the oil and add the mustard seeds, allow to splutter.
Add the curry leaves, turmeric powder, fenugreek powder, chilli powder and the dried red chillies.
Fry for a minute till the raw smell goes.
Add the grated ginger and the grated green apple.
Mix well and fry for few minutes till the green apple reduces in quantity.
Add salt, and keep on adding the remaining oil little by little.
Keep on mixing well for about 20 minutes, till the oil separates from the sides.
Cool and store in an air tight container.
Keeps well for couple of weeks.
Makes a good side for idly, dosa, rice.



Notes:
Use of gingelly oil brings out the best taste of this thokku but vegetable oil can also be used.
The hotness was just correct, if the apples are very sweet, increase the chilli.
Only green apples can be used as they are sour which makes them perfect for the thokku.
