Jaggary Puttu from Rice Flour

I love the puttu that my grandmother makes. But the way she makes it is a very long process as she makes it from the raw rice. So i never had the thought of making it. But I tried this recipe from ready made rice flour and it is so easy. And just as delicious :)

Ingredients Required:
Rice Flour - 1 cup
Jaggery - 2/3 cup
Cashews - 10
Fresh grated coconut - 2 tblspn
Ghee - 1 tblspn
Turmeric Powder - pinch
Cardamon - pinch

How to make?
Dry roast the rice flour in a tawa till the raw smell goes off and it slightly changes color.
Cool the flour and slowly sprinkle warm water on the rice flour and mix with the other hand.
Add water till the flour becomes of crumbly consistency. You should be able to make a ball of the rice flour but when you leave it, it should crumble back to its powdery form.
Add a pinch of turmeric powder and mix well.
Steam cook the flour for 15 - 20 minutes. I placed the flour on a thin towel, placed the towel in the steamer which came along with the rice cooker and steam cooked it.
Once cooked, remove from the towel and spread it on a plate.
Heat some ghee, fry the cashews till golden and set aside.
Take the jaggery in a pan, add water just enough to cover the jaggery. Add some cardamon powder and the grated coconut.
Start boiling the jaggery on medium heat.  You should boil till the paagu vellam consistency that is, if you drop a little jaggery in a bowl of water, it should form a ball. 
Once it has reached that consistency, switch of the stove and add the steamed rice flour to the jaggery and mix with a spatula. 
Be careful not to burn your hand as the jaggery would be very hot.
Once it is mixed well, allow to cool for some time and then mix with your hand, make sure no lumps are formed. It should be crumbly.
Garnish with fried cashews and serve.


Note: 
The sweetness was just perfect, so if you have a sweet tooth, do add more jaggery.
I added very little turmeric, so the golden color of the puttu is missing.
