Keerai Vadai | Spinach Lentils Fritters | Vegan | Gluten Free



Ingredients Required:
Spinach - 3 cups tightly packed (washed and finely chopped)
Channa Dhal - 1 cup
Urad Dhal - 2 tbsp
Rice - 1 tbsp
Red Chillies - 6
Curry Leaves - few, finely chopped
Salt to taste
Oil for deep frying

How to make?
Soak the dhals and rice together for 2 hours.
Grind the soaked dhal, red chilli into a coarse paste adding minimum water as required.
In a mixing bowl, add the paste, spinach, salt, curry leaves and mix well
Heat oil in a pan for deep frying.
Take small balls of the batter, gently pat between palms and gently drop them in the oil.
Fry till golden brown on both sides.
Do the same for the rest of the batter.
Place on paper towels to absorb the extra oil.
Serve hot with ketchup or chutney of your choice!
