This is a tangy rice dish made with Raw Mango. Totally delicious. Makes a great travel food, or a lunch box recipe. Just serve it with some raita and papad of your choice.
Serves 2 - 4
Ingredients Required:
Rice - 1 cup
Grated raw mango - 1 cup
Cumin Seeds - 1 tsp
Channa Dhal - 2 tsp
Urad Dhal - 1 tsp
Turmeric Powder - 1 tsp
Salt to taste
Hing - pinch
Curry Leaves - few
Green Chilli -1
Red Chilli - 2
Sesame Oil - 1 tblsp + 1 tsp
How to make?
- Pressure cook the rice with 2 cups of water. Add salt and a tsp of oil while cooking so the rice does not stick to each other. Once cooked, set aside and cool.
- In a pan, heat oil, add the cumin seeds, channa dhal, red chilli and urad dhal. Fry till golden in color.
- Add the turmeric powder and the slit green chilli.
- Add the grated mango, salt and give a good mix.
- Close the pan and allow to cook for 5 - 7 minutes on low heat.
- Cool this mixture and gently mix the rice along with the mango mixture.
- Garnish with chopped cilantro and serve with raita of your choice
