Now for all those who are a big fan of Methi and Mutter you have got to try this! And also try the Methi Mutter Malai :) Its a simple one, which I made for lunch the other day and loved it :)
Makes about 5 - 6 Parathas
Ingredients Required:
Wheat Flour - 2 cups
Water as required
Salt - pinch
Oil - 1 tsp
For the filling:
Frozen Peas - 3/4 Cup
Methi - 1 bunch
Cumin seeds - 1 tsp
Oil - 1 tsp
Salt - pinch
Turmeric powder - pinch
Coriander Powder - 1 tsp
Chilli powder -1 tsp
How to make?
In a bowl of water, add the methi leaves and a pinch of salt. Allow to stand for 10 minutes so the bitterness of the methi is gone. Drain the water and set the methi leaves aside.
In a large mixing bowl, add the flour, salt sieve together.
Add the water as required and knead into a pliable soft dough. Coat with oil and cover the dough and set aside.
Microwave the frozen peas for a minute to defrost them and set aside.
In a pan, heat some oil, when hot add the cumin seeds and allow to splutter.
Add the methi leaves, and fry till the leaves shrink in size.
Add the peas and all the masala powder.
Gently mash the peas and allow to cook for 5 minutes.
Cool the filling and roll into 5 - 6 balls.
Divide the dough into 5 - 6 parts.
Roll them out into parathas as we do for Stuffed Aloo Paratha (Refer the Aloo Paratha link for step by step pictures).
Heat a tawa,on low heat.
When the tawa is hot, place the paratha and apply a drop of oil on both sides and cook till light brown spots appear on both sides.
Serve hot with curd/raita.
