I just love Mexican Food and burritos are my favorite. So usually this is on our dinner menu very often! There is so no fixed recipe for the burritos as the filling vary each and every time depending on the veggies available in the fridge. But a must for my burritos are beans, salsa and guacamole.
I usually get the bottled salsa from the store but this time I made everything from scratch - Wheat Tortilla, Salsa, Guacamole, Re-fried beans and the burrito turned out to be just delicious!
Ingredients Required:
For the Wheat Tortilla (Same as Chappathi/Roti):
Wheat Flour - 2 cups
Salt to taste
Oil - 2 tsp
Water
Salsa:
or use store bought salsa - 1/2 cup
Guacamole:
or use store bought guacamole - 1/2 cup
Re-fried Beans:
Other Ingredients:(Optional)
Hot Sauce
Salsa Verde
Tomato Ketchup
Shredded Cheese
Shredded Lettuce
Chopped tomato, onion, capsicum etc.
How to make?
In a large mixing bowl, add the wheat flour, salt and mix well. Add in 1 tsp of oil and mix.
Slowly add the water and knead into a soft pliable dough of the normal chapati/roti dough consistency.
Smear 1 tsp of oil on the dough and placed in a closed vessel for 10 minutes.
Divide the dough into 6 equal balls.
Roll out into thin round circles as we do for the roti. Make sure they are big enough to be rolled into burritos with the filling. The bigger the better.
Heat a tawa on medium heat and place the dough on the tawa.

Slightly reduce the heat to a little less than medium as we want to slow cook the dough so it does not puff up.
After bubbles appear, apply a tsp of oil on the top side and flip.
Apply a tsp of oil on the other side and cook till light brown spots appear on both sides.
Scoop a spoonful of the re-fried beans on the tortilla.
Add some guacamole, salsa.
Top it up with any additional ingredients of your choice.
Now fold the burrito as below.
It can either be left open on one side for immediate eating or closed on both sides for later eating.
To avoid spilling, wrap it up in aluminum foil and serve hot.
Hot Burrito ready! This makes one healthy meal as we are using whole wheat tortilla and the beans are full of protein and also it is stuffed with veggies of our choice.
Note:
Any other veggies like onion, tomato,and bell pepper can be added to the filling as fresh and slightly sauteed in oil.
Cheese is optional.
Fresh Shredded Lettuce can be added.
Whole wheat flour can be replaced with All Purpose Flour for regular tortilla or corn flour for tortilla.
