Mini Samosas are the all time favorite tea time snack and if it is baked the better! Here goes the recipe and I have taken pictures step by step. Hope it helps!

Makes 20 mini samosas
Ingredients Required:
For the cover:
All purpose flour - 2 cups
Salt - pinch
Baking Powder - 1 tsp
Water - 3/4 cup
Oil - 1 tsp

For the filling:
Potato - 2
Peas - 1/2 cup
Turmeric powder - 1/2 tsp
Chilli powder - 1 tsp
Garam Masala - 1 tsp
Cumin Seeds - 1 tsp
Ginger Garlic Paste - 1 tsp
Oil
Salt - pinch
Cilantro - few springs

How to make?
Cook and mash the potatoes and peas and set aside.
Heat a little oil in a pan, add cumin seeds and allow to splutter and add the ginger garlic paste.
Add the mashed potato and peas to the pan.
Add turmeric powder, chilli powder, garam masala, salt and chopped cilantro.
Give a good mix and set the filling aside.

In a mixing bowl, add the flour, salt, baking powder, mix well and knead into a soft dough by slowly adding water.
Cover with a tsp of oil and set aside for 20 minutes.
Divide the dough into 7 - 8 balls.
Roll them out using a rolling pin. Try to roll them out into a rectangle.

Cut the rolled dough into 3 parts as shown below.

Scoop out a spoonful of filling and place it on one of the strips.

Fold the strips as shown below.

Once all the sides are covered, slice of the remaining dough.

Do this for all the samosas.
Preheat the oven to 400 F.
Take a pan and cover with aluminum foil and place all the samosas.
Spray cooking oil on them and bake for 15 minutes.

Flip the samosas and spray some more oil on them and bake for another 10 minutes.

Serve hot with ketchup or chutney of your choice!
