Mixed Dhal - Truroots Sprouted Bean Trio | Vegan | Gluten Free

I had recently got a bag of Organic Mixed Lentils (Truroots Sprouted Bean Trio) from Costco. It looked really healthy and was very cost effective. It was a combination of lentils, mung and Adzuki beans -
pre sprouted and dried. I wanted to give that a shot, as it would make a good side dish at the same time a healthy one. This is one recipe which is very easy to make, and is a comfort food! Goes well with Chappati and Rice.
You can use any lentil mixture like - toor dhal, mung dhal, black urad dhal and green urad dhal.

Serves 2
Ingredients Required:
Bean Trio - 1 cup
Onion - 1, finely chopped
Tomato - 1, finely chopped
Ginger - 1 inch piece, finely chopped
Garlic - 2 pods, finely chopped
Salt to taste
Cumin Seeds - 1 tsp
Cumin Powder - 1 tsp
Coriander Powder - 1 tsp
Chilli Powder - 1 tsp
Turmeric Powder - 1/2 tsp
Garam Masala - 1 tsp
Oil - 1 tblsp
Cilantro - For garnishing
Lemon Juice - from 1/2 lemon
Ghee - 1 tsp

How to make?
Pressure cook the lentils for 3 - 4 whistles until soft.
In a pan, heat some oil, add the cumin seeds and allow to splutter.
Add the onions, garlic and ginger and saute till light brown in color.
Add the tomatoes and cook till well done.
Add the cooked lentils and all the masala powder and salt.
If the mixture looks thick, add some water. It tastes good when diluted.
Switch off the flame when it reaches boiling consistency.
Garnish with a tsp of ghee, chopped cilantro and lemon juice.
Serve hot with rice/roti of your choice.



Notes:
For a vegan option substitute ghee with coconut oil
