After baking the delicious Vegan Orange Cake, it was a big hit among my family and friends, I wanted to bake some tasty Orange cookies. I still had some delicious juicy oranges in my fruit basket, so wanted to give it a try. I adapted this recipe from my Chocolate Chip Cookies.
Makes 36 - 40 Cookies
Ingredients Required:
Whole Wheat Flour - 1.5 cup
All Purpose Flour - 1/2 cup
Brown Sugar - 1/2 cup - 2 tblsp
White Sugar - 1/2 cup - 2 tblsp
Yogurt - 2 tblsp (Vegan or Dairy)
Butter - 1/4 cup
Oil - 1/4 cup
Vanilla Extract - 2 tsp
Baking Soda - 1/2 tsp
Salt - 1/2 tsp
Orange Zest - from 1 orange
Freshly Squeezed Orange Juice - 1/4 cup (a little less is fine)
How to Bake?
In a large mixing bowl, beat the sugar,oil and butter till creamy.
Add the yogurt, orange juice and vanilla extract. Mix Well.
Combine the flour, baking soda and salt. Stir well till incorporated.
Add the orange zest and fold.
Roll into a ball, cover with cling fling and refrigerate for 1 hour.
Pre heat the oven to 350. Spoon out small balls, slightly flatten them and place on the baking sheet.
Bake for 10 minutes, till the edges start to brown. Cool for a minute on the tray and remove from the tray.
Notes:
The original recipe used 1/2 cup butter. But I had wanted to reduce the butter and substitute with oil. So I tried that in this recipe. The cookies were delicious but the difference was that instead of crispy outside soft center cookies, it resulted in a little bit of chewiness in the center. I liked it. If you want soft center cookies use 1/2 cup butter instead of butter and oil.
