Oven Roasted Baby Potato | Vegan | Gluten Free

I had spotted these beautiful red skinned baby potatoes in the grocer the other day and had just had to pick few up. They were so tiny and round and perfect to be roasted.
I tried roasting them in the oven and they were absolutely delicious.
They make a good appetizer or a side to any rice dish.

Ingredients Required:
Baby Potatoes - 1 lb
Red Chilli Powder - 2 tsp
Turmeric Powder - 1/2 tsp
Cumin Powder - 1 tsp
Coriander Powder - 1 tsp
Salt as needed
Oil - 2 tbsp

How to make?
Half the potato and leave the skin on. Boil them in water for 5 minutes so they get partially cooked.
Once the potatoes are partially cooked, they would easily absorb the spices better.
In a large mixing bowl, place the drained potatoes, and add in all the spice powder and the oil.
Give the potatoes a nice toss so the spices are evenly coated.
Let this marinate for a minimum of 1 hour so the potatoes absorb the flavor.
Preheat the oven to 400 F, with a baking tray covered in baking sheet.
Once the oven is pre heated, carefully take the baking tray out and spray some oil so the potatoes do not stick to the bottom.
Place the potatoes in a single layer, cut side down so they do not roll.
Bake for 20 minutes, but do keep an eye as every oven is different.
Once the top of the potato is well roasted, flip them and bake for additional 10 minutes.
Remove from the oven and serve hot!
