Paavakai Varuval | Bitter Gourd Fritters | Baked | Vegan | Gluten Free

Anything which has baked and chips together is yummy and healthy! I have tried the shallow fried version of the same. The taste of the baked version is slightly different but definitely yummy and makes a good side dish for rice.

Serves 2
Ingredients Required:
Paavakai - 4, thinly sliced and de-seeded
Salt - as required
Chilli Powder - 1 tsp
Turmeric Powder - 1/2 tsp
Coriander Powder - 1 tsp
Oil Spray

How to make?
Make sure that the bitter gourd/paavakai is thinly sliced so it gets baked evenly. If the seeds are big, de-seed them.
Add in the salt and mix well.
Keep in a colander for 30 minutes so the excess water gets drained out. If required, gently squeeze out the water. This would reduce the bitterness.
Add the turmeric powder, chilli powder and coriander powder and toss well.
Pre-heat the oven to 350 and on a baking sheet, spread as a single layer and spray oil.
Bake for 10 minutes and flip the sides, bake for another 5 minutes.
Change the mode to Broil and broil for 3 - 5 minutes. 
Make sure to be aside the oven with the oven lights turned on as it tends to get burnt easily. 
When it has turned brown, remove from oven and allow to cool down for 5 minutes.
Serve as accompaniment to rice.
