Kulcha is a type of Indian flatbread made from Maida Flour. The kulcha is stuffed with a mixture of onion and paneer in the below recipe.
Makes 6 Kulchas
Ingredients Required:
All Purpose Flour (Maida) - 2 Cups
Baking Powder - 1/2 tsp
Baking Soda - 1/8 tsp
Sugar - 1 tblsp
Salt - 1 tsp
Fresh curd/yogurt - 1/2 cup
Ghee - 1 tblsp
For the Filling:
Onion - 1/2, finely chopped
Paneer - 1 Cup
Cilantro leaves -few springs, chopped
Cumin Seeds - 1 tsp
Green Chilli - 2, chopped
Ginger Paste - 1 tsp
Salt to taste
How to make?
In a large mixing bowl, mix all the dry ingredients.
Add the curd and ghee and mix well.
Knead well to form a stiff dough.
If required add a little water.
Cover the bowl with a damp cloth and let it sit for 2 hours.
Mix all the ingredients required for the filling and set aside.
After the mentioned hours, take the dough and divide into 6 equal six balls.
Take a dough ball and flatten it into a small circle using a rolling pin.
Make a ball of the filling and place it on the center of the rolled dough.
Bring all the sides of the dough to the top to cover up the filling. Cover it up in such a way that the filling is not seen.
Now press the dough slowly between your palms to a small circle and gently use a rolling pin to make a bigger circle.
Be careful to not let the filling outside.
Heat a pan and place this kulcha on the pan and heat on medium heat.
Add ghee or oil on the surface of both sides and turn over when required. Remove from the pan when it has light brown spots on both the sides.
