Quesadilla - Vegetables, Bean & Cheese


This is one of our favorite Mexican dish. I make it often for dinner. It would also make a great party appetizer or a lunch box menu. I do not have a Quesadilla Maker, and made this on my stove with a non stick pan.

Serves  - 2
Ingredients Required:
Flour/Wheat Tortilla - 4, (Big Size)
Oil

For the Filling:
Mexican Shredded Cheese Mix - 1 cup
Refried Beans - 1 cup
Spinach - 2 cups, tightly packed
Capsicum - 1/4 cup, finely chopped
Corn Kernals - 1/4 cup
Onion - 1, finely chopped
Garlic - 4 pods, finely chopped
Mexican Hot Sauce as needed.

Prepare the filling first. Heat a pan, add a little oil and saute the onions and garlic for a minute. Add the spinach, corn and capsicum. Cook well till the spinach wilts.
Add cumin powder, black pepper powder and salt to season. Add this vegetable mixture to the re-fried beams and give a good mix.

Warm the tortillas on the stove top, or wrap them in a paper towel and warm them in the microwave for 30 seconds.
Heat a large skillet. Add few drops of oil.
In one half of the tortilla, layer the following.
Layer 1 - Cheese
Layer 2 - Re-fried beans and vegetable mix
Layer 3 - Hot sauce (if using)
Layer 4- Cheese
Now fold the other half of the tortilla over this. Now you have half a circle.
When the skillet is hot, gently place this on the skillet and fry on medium heat for a minute, till it browns.
Now, quickly flip it over with the help of a spatula. Fry for another minute till it browns.
The cheese would have melted and the layers would have stuck together.
Slide this onto a plate, and slice as desired.
Serve with Salsa / Guacamole of your choice.

Notes:
If you are using a burrito size tortilla (as I am using), you can layer in one half and fold the other half.
If you are using a smaller size (Taco Size), you can layer on the full tortilla and use another tortilla for the top.
I usually use wheat/flour tortillas. Have tried with Corn Tortillas once. It had a different taste to it.
You can use vegetables of your choice for the filling.
If adding onions/garlic in the refried beans, you can skip them here.

I usually use a pizza cutter for slicing. I find it much easier and less messy than a knife.
Be light on the filling. If you over do, then the filling tends to come out while flipping on the skillet and while slicing.
