Refried Beans | Gluten Free

This is a basic preparation of beans and is used in many of the Mexican Dishes like burritos, wraps, tacos and even can be used as a dip for the tortilla chips.
Usually these are made with lard in the restaurants, but it can be made into a vegetarian dish without lard. I usually make this for making wraps and burritos.
The re fried beans can be made with a number of beans like - Pinto Beans, Red Kidney Beans, Kidney Beans, Mexican Black Beans. Today I made it with Red Kidney Beans.
It does not look pretty in the photos, I tried my level best! But it sure was delicious :)
Serves 4:
Kidney Beans/Pinto Beans/Black Beans - 1 cup (can even be a mixture of all these beans)
Onion - 1, finely chopped
Minced Garlic - 1 tbsp
Salt to taste
Red Chilli powder - 1 tsp or to taste
Cumin powder - 1 tsp
Ground Pepper - 1/2 tsp
Oil - 1 tbsp
Butter -1 tbsp


How to make?
Soak the beans overnight in water and pressure cook them till mash-able consistency with salt.
The cooked beans can either be mashed with a potato masher or  using a food processor/blender
In a pan, add some oil and add the garlic and onion. Saute till light brown in color.
Add the mashed beans to the pan and mix well.
Add the chilli powder, cumin powder, ground pepper, butter. Mix well.
The consistency should be thick of spreadable consistency. Cook till this is reached and the extra water is evaporated.
This re-fried beans can then be used in a number of Mexican dishes or can be eaten as it is with a topping of salsa and cheese.
Notes:
This can be stored in a air tight container/ziploc bag and frozen for future use.

There are lot of variation to this dish, like other vegetables (corn kernels, tomato, capsicum, sereno peppers, jalapenos) can be added to the bean mixture along with onion and garlic for more flavor.

The canned beans can also be used instead of soaking the beans overnight and pressure cooking them as it takes less time.
