Thai Veg Brown Fried Rice | Vegan | Gluten Free




We had been to a local vegan place for dinner few weeks back, and ordered a dish 'Guru Fried Rice'. It was just heavenly. I was little skeptical before ordering the dish as it said it was made with brown rice. And I do not like brown rice. But my husband was sure that it would taste good, and he was sure right. From that time on, whenever we go to that place we make sure to order this dish, and even more we tell our friends to try it out! So I wanted to make this dish at home. The rice had a strong garlic flavor along with soy sauce and also some curry flavor. It had veggies chopped into small cubes and also Tofu was chopped into small cubes and fried.
Here goes my trial, it did come to taste pretty close!

Serves 2
Ingredients Required:
Brown Rice - 1 cup , (the small fat kind)
Chilli Sauce - as per taste
Soy Sauce - 4 tblsp
Curry powder - 1 tsp
Tofu - 1/4 cup cut into small cubes
Garlic - 4 pods
Spring Onion - 4 sprigs, finely chopped (separate the greens and whites)
Bell Pepper - 1/2 cup, finely chopped
Carrot - 1/4 cup finely chopped
Salt - as per taste
Oil - 1 tblsp



How to make?
Cook the brown rice. I boiled water in a large pan along with a pinch of salt and a tsp of oil. Once it starts boiling, add in the brown rice and cook till done. Drain the remaining water. Spread on a plate and allow it to cool down.  Set aside.
Chop all the required vegetables into fine pieces. Separate the green and white part of the spring onion, set aside the green part for garnishing.
Cube the tofu into small cubes. The tofu can be fried or steamed as per your taste. I had toasted the tofu on a skillet with a tsp of oil till golden brown on all sides.
In a large skillet, add the oil and once hot, add the finely chopped garlic and saute till golden brown. 
Add in the white part of the onion, bell pepper and carrot. Saute for few minutes. 
Add the chilli sauce and soy sauce. 
Also add the curry powder and salt (be careful with the salt as the soy sauce would be salty).
Give a good mix and once it comes to a boil, add the cooled rice and toss well.
Now add the tofu and give a final toss.
Garnish with green onions and serve hot!

Notes:
The tofu can also be steamed or deep fried.
Addition of basil also gives a good flavor.
If you do not have thai curry powder, substitute with sambar/rasam powder.
