Veg Pizza Bites | Mini Pizza

I just got a can of Pillsbury Grand Biscuit dough the other day when I was grocery shopping. I was browsing through different recipes when I came upon the mini pizza. They are so so easy to make and also very tasty. This makes a great snack for kids, as they are small and easy to hold. You can also have your kids decorate the pizza with their favorite toppings.
You can also try them for party food! They would make great appetizers. And the best part is if you have a family who each like different toppings or if you want to try out variety of combinations on the toppings/sauce and cheese,  this would be great option.
If you do not have biscuit dough, then you can make your own pizza dough.  Please refer my Pizza recipe on how to make your own dough.

Makes 16 mini pizza
Pillsbury grand biscuit dough - 1 can
Pizza or pasta sauce - 1/4 cup or as needed
Mozzarella Cheese or your favorite -1/2 cup or as needed
For the toppings: (I used the below)
Onions, chopped - 1/2 cup
Tomato, chopped - 1/2 cup
Capsicum, chopped - 1/2 cup
Sweet corn - 1/2 cup
How to make?
If using biscuit dough,  open the package as per the instructions.
Separate each biscuit into 2 or 3 layers.
Gently flatten each layer out, so it becomes slightly thinner.
Prepare a baking sheet, lined with parchment paper.
Place out each biscuit next to eachother.
Spread a teaspoon of pasta sauce on each biscuit.
Top it up with your favorite toppings.
Cover it with cheese.
Place in the preheated oven and bake as directed on the packaging.
I baked mine for 15 minutes the base was slightly light brown.
Remove and serve hot.
To freeze:
This can also be make ahead food for parties.
After baking them,  cool them to room temperature, and place them on a tray and freeze them for 12 hours.
Later store the frozen pizzas in a ziploc bag and freeze them till later use.
When using them, bake for around 10 minutes for 350 F and serve hot.


Note:
If you would like slightly larger pizzas, then do not separate each biscuit into 2 or 3 parts. Just roll out each biscuit to the size you would want. It usually comes out to be almost equal to personal pan pizza.
