Vegetable Fried Rice | Vegan | Gluten Free



Serves 2
Ingredients Required:
Rice - 1 cup
Salt - as needed
Sugar - 1 tsp
Black Pepper - 1 tsp

Vegetables:(all the vegetables must be chopped finely into small cubes)
Carrot - 1
Capsicum ( 3 colors) - 1/4th of each
Spring Onion - 3 springs
Beans - 10

How to make:
Cook the rice with a little salt, a tsp of oil and 1 and 1/2 cup of water, and cool down. Once cooled separate the grains.
In a pan, add a little oil, add the chopped vegetables and stir fry on medium high for few minutes. Add the salt, sugar and pepper powder. Mix well.
Add in the cooled down rice, toss gently so everything is mixed well and serve hot!
