Vegetable Stew | for Aappam | Vegan | Gluten Free



Serves 2 - 4
Ingredients Required:
Coconut Milk - 1 small can
Onion - 1/2, chopped
Potato - 1, boiled, cubed
Carrot - 1, peeled and chopped
Beans - 8, chopped
Cauliflower - 1/4 cup of florets
Peas - 1/4 cup

Green Chilli - 2, slit
Bay Leaf - 1
Cloves - 2
Salt as required
Garlic - 1 tsp
Ginger - 2 tsp
Oil
Curry Leaves - few


How to make?
Heat a little oil in a pan, add the bay leaves and cloves and then add the onion, ginger and garlic. Fry till translucent.
Add all the other vegetables, salt.
Add 1 cup of water and bring to a boil, boil for few minutes till the vegetables are partially cooked.
Add the potato.
Add the coconut milk and stir well, cook on low heat for 15 minutes.
Garnish with curry leaves and serve warm with Aapam.
