Vegetables in White Sauce - Baked



I was thinking what to make for lunch the other day and was not in a mood to spend lots of time in the kitchen :) I just saw my veggies rack in the refrigerator and there was little of everything! Why not throw everything together and bake them in white sauce? Sounds easy and it is one healthy meal. And that's just what I did!

Serves 2
Ingredients Required:
Potatoes - 2
Carrot - 2
Peas - 1/4 Cup
Beans - 10
Cauliflower - 1/2 Cup
Corn Kernels - 1/4 Cup
Cilantro - Few Springs

For the White Sauce:
Milk - 2 Cups
All Purpose Flour - 4 tblspn
Butter - 1 tblspn
Salt - to taste
Pepper - 1 tsp
Dry Basil Leaves - 1 tsp
Dry Italian Seasoning - 1 tsp

How to make?
Boil the potatoes, peel and slice them. Set aside.
Boil the other vegetables with a pinch of salt till half cooked and set aside.
Heat the butter in a small non stick pan, and add the all purpose flour. Fry for a minute. Slowly add in the milk and keep stirring with the other hand. Mix well so no lumps are formed. Keep the heat on low.
Add the pepper, salt, Italian seasoning and the dry basil leaves. 
Keep stirring for 3 - 4 minutes on low heat, the milk would have thickened into a sauce like consistency.
If you want a very thick sauce you can keep on stirring it on low heat till you get the desired consistency.
Preheat the oven to 350 F.
Arrange the boiled vegetables in a baking pan ( I used my 8" circle pan). Garnish the vegetables with chopped cilantro.
Pour the white sauce over the vegetables, such that all the vegetables are covered.
In this step you can top it up with a layer of grated cheese ( But I did not use cheese).
Place in the preheated oven and bake for 20 minutes, till the surface becomes light brown.
Cool for few minutes and serve!
