Coconut Rice as the name suggests is a simple rice made with grated coconut and seasoned. Makes a great lunch box meal as it is simple, easy and quick to make.
Serves 2-4
Ingredients Required:
Rice - 1 cup
Coconut Oil - 1 tblsp
Grated Coconut - 1/4 cup
Salt to taste
Cashews - few
To season:
Coconut Oil - 1 tblsp
Mustard Seeds - 1 tsp
Red Chilli - 3
Channa Dhal - 1 tsp
Urad Dhal - 1 tsp
Hing - pinch
Curry Leaves - few
How to make:
Cook the rice with 2 cups of water and allow to cool down so the grains are separate and not mushed together.
In a pan, add the coconut oil, and the cashews. Fry till golden brown and keep aside.
In the same pan with the left over oil, add the grated coconut and saute for couple of minutes till the coconut moisture goes away, till a nice aroma. Set aside.
In the same pan, add coconut oil and when hot add all the items listed under 'To Season' and fry till mustard seeds splutter.
Mix everything with the cooled rice and add salt as required.
Notes:
Any other oil can be used, but coconut oil adds to the flavor.
Adding cashew nuts is optional and other nuts like groundnuts or almonds can be used as well.
