Paneer Butter Masala | Instant Pot


Instant pot has been a life saver many time to quickly cook up a delicious meal on the table for a hungry family! This was one such times where I had to quickly put something on the table for my hungry son. Who would not love to have Paneer Butter Masala? That too if it can be done in 10 minutes with minimum effort! After I created this recipe, I have never gone back to my stove top for this dish!

Serves 2-3
Ingredients Required:
Onion - 1 large
Tomato - 2 to 3 medium size
Ginger Garlic Paste - 1 tblsp
Salt - to taste
Cumin powder - 2 tsp
Coriander powder - 1 tsp
Turmeric powder - 1 tsp
Chilli powder - 2 tsp (or depending on your spice level)
Garam Masala - 2 tsp
Honey - 2 tsp
Kasthuri Methi - 1 tsp crushed
Cilantro - finely chopped
Oil - 1 tbslp
Butter - 2 tblsp
Milk - 1/4 cup (or you can use cream for a more creamier version)
Cashews/Almonds - 1/4 cup (soaked in water for 10 minutes)
Paneer - 1 cup, cubed

How to make:
Set the IP in saute mode. 
Add the oil, onion, tomato, ginger garlic paste and the nuts. You do not have to wait for the onion to be cooked before adding the others.
Give a nice mix. Add salt and 1/2 cup of water.
Manual mode - cook for 3 minutes on high.
Blend the mix with either an hand blender or regular blender to a smooth paste. I prefer hand blender so don't have to wait for the mixture to cool down.
Set IP in saute mode again. Add all the spice powders and paneer along with another 1/2 cup of water. If the gravy is too thick add another 1/2 cup of water.
Manual mode  cook for 3 minutes on high.
Add the milk/cream. butter, and honey. Give a good mix.
Garnish with crushed Kasthuri methi leaves and cilantro.
Serve hot with roti/paratha or rice.

    1. Is it ¼ cup cashew and ¼ cup almonds each?
    2. Should almonds be peeled?
    3. If I use a hand blender, do I blend directly inside of the IP?
    4. Is the lid for the IP ever used in this recipe? If so, when?

    1. it is 1/4 cup in total - you can take a mix of almonds and cashews. No you do not have to peel the almonds. Almond peel is very nutritious. Yes you can blend directly inside the IP. Yes the lid is used while manual cook mode. IP does not start cooking without the lid.
