Rava Dosa

Rava Dosa is an all time favorite at our household and I end up making this dish atleast once a week for sure. This is a simple instant dosa mix that does not involve any soaking or fermentation. Served with spicy tomato chutney is just heaven.


Makes 8 - 10
Ingredients Required:
Rava / Semolina - 1 cup
Rice Flour - 1 Cup
Green Chilli - 2 finely chopped
Salt - as required
Coarsely ground pepper - 1 tsp
Ginger - 1 inch - finely chopped
Coriander Leaves - 1 tblsp - finely chopped
Curry Leaves - few
Oil - to drizzle

How to make:
  1. Take a big mixing bowl and add all the ingredients except the oil and mix well. Add water such that it becomes a pour-able consistency. Set aside for 10 minutes.
  2. Heat a griddle or skillet on high heat and brush with oil. 
  3. The mix would tend to thicken up and add more water - it should be thinner than a dosa batter. Should be easily pour-able consistency else you would not get crispy dosa.
  4. Pour the batter on the griddle from outside to inside. You do not need to spread it in a circular motion, once the batter is poured from the outside, it would spread on its own since it is very thin.
  5. Drizzle oil and allow to cook for few minutes till it is golden brown. You do not need to flip the dosa over. 
  6. Fold in half and serve with chutney of your choice.




Notes:
  1. If the batter becomes thick while making the dosa, keep pouring water as required.
  2. Important to keep the batter in a thin flowing consistency to achieve crispy dosa.
  3. Add so onions, to make Onion Rava!
  4. I usually make this in my standard iron dosa pan that I got from India. I have also tried this on my electric griddle, and both works fine everytime.
