Hara Bhara Kebab | Spinach Potato Kebab

These are simple kebab cooked with Spinach and Potato, hence the dish is green in color. Makes great appetizers when servers with chutneys. Also to mention, these freeze well. They can be made ahead and then fried when needed. They are crispy on the outside and soft on the inside.






Makes 35 small size
Ingredients Required:
Potato - 4
Spinach - 3 bunches (I used the costco size box)
Salt - to taste
Cumin powder - 2 tsp
Coriander Powder - 2 tsp
Turmeric powder - 2 tsp
Chilli powder - 2 tsp
Garam Masala - 2 tsp
Bread Crumbs - 1 cup
Cashews - 35
Oil - for deep frying

How to make?
Boil and mash the potato. Set aside.
Cook the spinach on a wide open pan with a tsp of oil. Saute for few minutes till it wilts and cooks well.
Once cooled, grind to a paste.
In a large mixing bowl, add the mashed potato, spinach puree and all the spices. Mix well.
Add in the bread crumbs as needed so the mixture is a pliable dough consistency.
Make small balls and flatten between palms. Place a cashew on top and gently press.
Repeat the same for all the dough.
Place it in the freezer for 10 minutes, so it holds shape.
If you need to freeze, this is the step you take it out of the freezer and then store them in a freezer safe container/bag, for later use.
Heat oil on medium heat. Drop the kebabs and fry them till well cooked. They would turn dark green in color.
Serve hot with green chutney of you choice.
