I have been meaning to make these for a long time and finely got my hands to it. These are mildly sweet cookies made with maida and deep fried. They make a great accompaniment to tea/coffee. Store in air tight container.
Ingredients Required:
All Purpose Flour - 2 cups
Cardamon Powder - 1 tsp
Sugar - 1/2 cup
Ghee/Clarified Butter - 1/4 cup
Milk - 1/2 cup
Sooji/ Rava - 1.5 tblsp
Oil - for deep frying
How to make?
In a mixing bowl, take the flour, sooji, cardamon powder. Mix well.
Boil milk, and when hot, add sugar and ghee. Whisk till well incorporated.
Add this mixture to the flour and gently knead to a dough.
Set aside closed for 10 minutes.
Divide into 2 balls and roll it out with a rolling pin to a thickness of 1/4 inch.
Cut into squares or any desired shapes. Repeat for all the dough.
Heat oil on high heat and when hot, reduce to medium-low heat.
Fry in batches till golden brown on medium low heat.
Drain on paper towel, allow to cool down and store in air tight container.
