Tutti Frutti

I have always loved tutti frutti as a kid and enjoyed cakes, bread and ice cream made from them.  My favorite was the Britannia Fruit Bread and I still crave for them often but still have not tried making them at home. Will try that soon!

Ingredients Required:
Raw Papaya - 1
Sugar - 1 cup
Vanilla essence - 1 tsp
Food color - 2 to 3 colors depending on your choice


How to make:

  1. Peel the papaya and cut in half.
  2. Scoop out the seeds and score out the inner skin.
  3. Cut into small cubes.
  4. Boil 5 cups water and drop the papaya cubes in the boiling water.
  5. Cook for 6-8 minutes till the papaya cubes are semi transparent.
  6. Drain and set aside.
  7. In a pan, add sugar with 1.5 cups of water.
  8. Once the sugar dissolves, add the papaya cubes and cook for 15 minutes, till the sugar syrup thickens.
  9. Add in the vanilla essence and mix.
  10. Set 3 bowls (depending on how many color you need), and split the papaya evenly in the bowls.
  11. Add few drops of the food color and mix well.
  12. Set aside for 12 hours to dry.
  13. Drain them on a paper towel so it absorbs any extra moisture.
  14. Once dried store in air tight container.
Notes:
I used some beetroot boiled water for the red color.
This can be used in cakes, bread and ice creams!
