There are many days when you do not have the time, mood, or energy to make an elaborate meal for the family but still need to get something yummy on the plate. Today is one such day where my day was filled with meetings and had exactly 20 minutes from preparing and getting something on the plate for the family.
Spent a minute through the fridge and got a couple of veggies - beans, carrots, tomato, paneer. Grabbed an onion and ready to chop and cook.
Serves 4
Ingredients Required:
Basmati Rice - 1 cup, rinsed and drained
Salt - to taste
Bay leaves - 2
Cinnamon - 2 inch stick
Cloves - 4
Cardamon - 2 pods
Ginger Garlic paste - 1 tsp
Water - 1.5 cups
Ghee - 1 tblsp
Vegetables:
Green Beans - 8, chopped into long pieces
Carrot - 1, cubed
Potato - 1 cubed
Cauliflower - 1/2 cup florets
Peas - 1/4 cup
Paneer - 1/4 cup, cubed
Onion - 1, finely chopped
To grind:
Cilantro - 1/4 cup
Mint - 10 leaves
Coconut - 2 tblsp
Green chilli - 1

Peas - 1/4 cup

How to prepare:
- Grind all the ingredients under the 'To Grind' section to a smooth paste and set aside.
- Turn on the Instant Pot in Saute mode.
- Add ghee and then add in the whole spices - bay leaves, cinnamon, cloves, cardamon.
- Add the ginger garlic paste and onion. Saute till the onions are well cooked.
- Add in all other vegetables, except the cauliflower. Saute well.
- Add the drained rice, salt, spice paste, and 1.5 cups of water. Give a final stir.
- Add the cauliflower on top and do not mix. (this is to not mush the cauliflower)
- Cook in manual mode for 4 minutes.
- Quick release of pressure when done.
- Serve hot with onion raita.
