Thengai Podi - Coconut Spice Powder

This is a simple spice powder made with coconut and lentils and can be mixed with rice and ghee.




Ingredients Required:
Urad Dhal - 1 cup
Channa Dhal - 1/4 cup
Grated Coconut - 2 cups
Dry Coconut - 1/4 cup (optional)
Curry leaves - few
Salt - to taste
Red Chilli - 10
Coconut Oil/Ghee - 1 tblsp

How to make?
  1. In a pan, dry roast the urad dhal and channa dhal along with chilli
  2. Roast till it becomes light pinkish in color and you get a nice aroma
  3. Set aside to cool
  4. In the same pan, add the oil or ghee, add the grated coconut and roast on medium to low flame till it is golden brown
  5. Cool down all the ingredients
  6. In a blender/mixie, add the lentils, chilli, curry leaves and blend to a coarse powder
  7. To this add the coconut and the dry coconut along with salt
  8. Blend till coarse and well incorporated
  9. Store in a air tight container in the refrigerator


Notes:
  1. I used frozen grated coconut. You can use fresh as well
  2. I had got dry coconut in Trader Joes. This is optional and can be avoided, but adds a nice flavor
