Til Chikki | Sesame Chikki

Simple dessert made with sesame seeds and jaggery. That is it, just two ingredients and you can make some delicious chikki. There are lots of varieties of chikkis that can be made with variety of nuts and seeds. This is one such variety.


Makes 20-25 squares
Ingredients Required:
White Sesame seeds - 1 cup
Jaggery-1/2 cup
Ghee - 1 tsp

Parchment Paper - to spread and cut the chikki

How to make:

  1. In a pan, dry roast the sesame seeds on medium heat. Be careful that they do not burn.
  2. Roast them for few minutes until you hear a splutter/crackling sound.
  3. Set aside.
  4. In the same pan, add the ghee and the jaggery.
  5. Keep mixing till the jaggery is fully melted and becomes in a crystal consistency.
  6. Crystal consistency - drop a bit of jaggery in a small bowl of water. It should hold its shape and should be hard as a rock/crystal.
  7. Add sesame seeds, mix well.
  8. Pour the mixture onto the parchment sheet. 
  9. Place another parchment sheet on top and start rolling it out with a rolling pin. 
  10. Roll till it reached 1/4 inch thickness.
  11. Cut out into squares.
Notes:
  1. The sweetness was a little on the lesser side, the way we prefer it. If you have a sweet tooth, increase the quantity of jaggery by 1/4 cup.
  2. Depending on the parchment paper, the mixture might stick to the paper on cooling down. If you are doubtful, grease with ghee before pouring.
  3. Once the mixture is poured, act quickly in rolling and cutting out into squares. If it cools down, you would not be able to do it.
